Asparagus with a freshness kick

Aromatic, crispy asparagus from the oven made easy


Do you like roasted vegetables? Are you a fan of roasted flavors? And do you love the freshness of lemon? Then this simple recipe is just right for you. Asparagus can be prepared in many different ways. But the quickest and easiest way is in the oven.

Ingredients

500g green or white asparagus

1 tsp lemon juice

1/4 tsp grated lemon zest

3 tbsp olive oil

Salt, pepper, spices and herbs (e.g. chives, coriander or parsley)

Parmesan cheese if desired

Preparation

  1. Wash the asparagus.
  2. Peel the lower part of the asparagus and cut off the woody end.
  3. Place the asparagus either on a baking tray or in an oven dish
  4. Drizzle the asparagus with a mixture of olive oil, lemon juice and zest, herbs and spices.
  5. Cook the asparagus at 180 degrees for approx. 20-30 minutes.

If you like cheese, you can sprinkle the asparagus with a little Parmesan halfway through cooking. For the cheese asparagus, omit the lemon juice and lemon zest according to taste.
