Summer strawberry tiramisu with matcha

A recipe to fall in love with


It's strawberry season! We have a light summer recipe for you.

Ingredients for 4 - 6 people:

  • 15 pieces of ladyfingers
  • 700g fresh strawberries including some for garnish
  • 2 tbsp powdered sugar
  • 1 tbsp lemon or lime juice
  • 250g mascarpone
  • 150g low-fat quark
  • 1 sachet vanilla sugar
  • 3 tbsp matcha powder
  • 1.5 dl full cream
  • 50g milk chocolate

Preparation:

  1. Spread the ladyfingers in a shallow gratin dish
  2. Wash and hull the strawberries. Cut one half of the strawberries (350g) into slices and put them to one side. Place the other half in a measuring cup.
  3. Add 2 tablespoons of powdered sugar and 1 tablespoon of lemon or lime juice to the strawberries in the measuring jug. Then puree everything with a hand blender and pour the mixture evenly over the ladyfingers.
  4. Spread the strawberry slices over the ladyfingers as well.
  5. Place the mascarpone, quark, matcha powder and vanilla sugar in a bowl and mix all the ingredients together.
  6. Whip the cream and mix it carefully into the mascarpone mixture.
  7. Chop the milk chocolate into small pieces.
  8. Spread the white mixture into the mold and smooth it out with a scraper. Garnish with a few strawberries and the chocolate pieces if desired and place the tiramisu in the fridge immediately for around 3 hours.
